Cook: Eggs Poached in Curry Sauce

I love curry! And the title itself tweaked my fancy. It looks entertaining to make!


This recipe is a weekend breakfast favourite in our house, and tastes even better than it sounds! Plus, the drama of watching these cook is all sorts of wholesome entertainment.


Olive oil

One onion, diced

A few (or several, if you’re like us) cloves of garlic, minced

Chili flakes to taste (some like it hot…)

Ginger – freshly grated is preferable

2-3 tsp curry powder


Black pepper

Heaping teaspoon of sugar

2 cans of diced tomatoes

Cilantro (fresh)

Spinach (optional)

One small can of coconut milk (4 oz)

6 – 7 eggs (depending on what fits in your pan!)

6 English muffins, toasted
